Ingredients:

1 quart of water

½ cup of coarse salt

½ of white sugar

Paprika or fish spice

Instructions:

  1. Mix water, sugar and sugar on low heat until sugar is melted
  2. Let fish rest in mixture overnight
  3. Preheat the electric smoker
  4. Rinse fillets and pat dry
  5. Sprinkle fillets with fish spice or paprika
  6. Smoke the fish for +- 3 hours at 175 – 200 F
  7. When preparing your own caught fish it is best to let the smoker reach an internal temperature of 160 degrees F to ensure that there are no bacteria or disease in the fish.
